The challenge
A national firm needed a single caterer who could handle three days of meals across two ballrooms — including a partners' dinner with seared tuna as the main.
Our approach
We staged out of a back-of-house prep room at the Joule, ran two service captains, and built a rotating menu so the lawyers weren't eating the same chicken on day three.
The result
Zero service issues across nine meal periods. The firm rebooked for the following year on the spot.
