The challenge
Set-up needed to begin at 5:30 AM for an 8 AM doors-open. The space had no kitchen and no elevator service before 7.
Our approach
We staged everything in our refrigerated van overnight, used induction burners for the hot stations, and positioned grazing tables to absorb the worst of the press-line crowd.
The result
By 9:15 every guest had a plate and the panel started exactly on time.
